90gall purpose flour
10gcocoa powder
4gbaking powder
130gdark chocolatechopped
90gmilk chocolatechopped
45gbutter
80gcaster sugar
50glight brown sugar
2eggsat room temperature

Istruzioni
Preheat the oven to 180°C and line 2 baking sheets with parchment paper.
In a bowl mix the flour with cocoa powder and baking powder.
Melt chocolates and butter in a makeshift double boiler or in the mircowave.
In the bowl of a stand mixer beat the eggs with sugars and a pinch of salt until thick and creamy. Reduce the speed and mix in the melted chocolate.
Sift the powders and fold them into the chocolate batter using a spatula, without overmixing. The batter should have the consistency of the brownie one.
Using an ice cream scooper, scoop the batter onto prepared baking sheets about 4-5 cm apart.
Bake brownie cookies for about 13-15 minutes. Don’t overbake them.
Allow to cool completely on the cookie sheets. Remove cookies from the trays with a thin spatula.
Note
Store brownie cookies in an air tight container up to 3-4 days.
